Professional chefs Chris and Chris designed this sharp-looking and hard-working prep station to be as useful on a patio or near an outdoor grill as it is in the kitchen. Its 2-inch-thick cutting and serving surface is made of gorgeous Acacia wood and constructed in end-grain style, so it’s rugged enough to withstand sharp knives as well as the elements. The surface of an end-grain cutting board or block is comprised of the millions of exposed wood fibers at the cut ends of short rails of wood. These fibers can absorb sharp blades over and over again without showing the effects.
End-Grain Acacia Wood Is Striking in its Kaleidoscope of Colors
Typically, Acacia wood is a highly variable blend of medium gold to reddish brown, and it’s not unusual to see contrasting ribbons or colorful streaks. The beauty of the work station’s top is further enhanced by its end-grain style of construction, which involves arranging dozens of 2-inch-long wood pieces side by side in a grid-like pattern. The end result is a cart top that resembles a color-rich checkerboard in which no two rectangles are exactly alike.

This system makes it easy to collect either carved food or the juice or waste left over from your carving by simply directing it to a cut-out in the center of the work surface. A semi-circular juice groove carved into one side of the circular work top aids in the process. Depending on what it is you’re collecting, position either the stainless steel chef pan that's provided, or hang a trash bag from the trash bag ring (also provided) below the cut-out to catch the material you direct to it.
