The key question you must answer in order to decide on a finish is whether you intend to cut directly upon it. Whereas you can cut upon a countertop finished with natural oil, you should not cut upon a Boos walnut countertop coated with Varnique. Varnique provides a protective high-sheen shield, but Varnique can be compromised by a sharp knife blade slicing into it.
