When filleting, you want a knife with a thin, flexible blade that enables you to make the cuts necessary in order to generate the largest possible fillet (i.e., boneless piece of meat between the animal’s ribs and hipbones). With respect to filleting a fish, you’ll want to start by making a clean cut along the backbone of the fish; to weave your blade around its bones; and to cleanly slice its skin away from its flesh (the layers between skin and bone). To accomplish this you’ll need the help of a fillet knife that is at the same time strong, thin and flexible, enabling you to easily maneuver it into places where a typical kitchen knife could never reach. This particular Chroma Type 301 knife was designed specifically for the task. It enables you to cleanly and effortlessly separate flesh from bone and skin, thereby maximizing yield and producing nice-sized sections ready for grilling, frying or baking.
While we most often think of the fillet knife as culinary cutlery’s best tool for filleting fish, we shouldn’t forget its versatility. Given its thin profile and flexibility, it’s equally well suited for other food prep applications. For instance, an excellent fillet knife can be the perfect kitchen tool for shaving thin slices of roast beef, chicken or steak. Whether the target of your culinary jujitsu is fish, chicken, pork or beef, when there’s a need to slice thin strips for cooking, look no further than a fillet knife. Once you’re set on finding a great fillet knife, select the absolute best: the Chroma Type 301 Fillet Knife.
By the way, if you’re curious, you might find it interesting to know that filet – with a single L – is typically associated with French interpretations or translations.
