Nearly 3000 years ago the Mayans held sacred ceremonies in the pyramids they built in Mexico and Central America. Today, John Boos & Co. uses hundreds of miniature replicas of those ancient pyramids in each Mayan cutting board, with an entirely different ceremony in mind – the breaking of bread with family and friends. Whereas the pyramids were symbolic for the Mayans, they’re highly functional in this application, serving as wooden spikes that grip the meat to be carved, thereby preventing it from slipping and sliding around.
This unusual carver also incorporates channels for capturing juice and slivers of meat that might otherwise spill onto your kitchen counter. First, there’s a channel rings the island of mini pyramids at the board’s center. This ring is connected to a juice groove that runs along the full perimeter of the carving board by a series of four short channels. You’ll be amazed by how much fluid the entire groove network can retain. Regardless whether you discard what you capture or reuse it to create a tasty gravy, you can't help but like this nifty feature.
The flip side of the board is flat, so fine for cutting and/or serving bread, fruit, vegetables or cheese. Finger grips carved into the board’s short sides make it easy to reverse and to pass among dinner or party guests. Since it’s made of beautiful edge-grain style butcher block - choose between Rock Maple and Black Walnut, you’ll want your guests to get a close-up look at its beautiful coloration and grain patterns.
